Spinach Stuffed Chicken with Beets and Lentils


Dinner Idea. I promise you this is super yummy.
Stuffed chicken breasts:
Cut them open like a hot dog bun and put a teaspoon of butter inside each one, sprinkle with salt to taste. Bake until cooked all the way through. While they’re baking, cook up some spinach, garlic, basil, and salt and set aside to cool a little. In a bowl combine a half cup of cottage cheese, a half cup of mozzarella, and a quarter cup of parmesan cheese. Mix this together with the spinach and garlic stuff.
When the chicken is cooked, stuff it with the mixture and pop it back in the oven for another ten minutes or so.

Honey Beets:
Peel and chop up 4-6 beets. In a pan, melt about a half stick of butter and add a 1/8C of honey and 1/2C of sugar. Let this come to a boil and then add the beets and a tsp of ground cloves and a tsp of nutmeg. Cook until beets are soft.

Garlic Lentils:
One cup of lentils and two and a half cups of water (you may have to add more). Boil for 30-45 minutes and then let them set for 5 minutes. Add a half stick of butter, about a tablespoon (I used more) of salt, and a teaspoon and a half of garlic powder. Oh, and basil too. Just a little bit.
